· 250g halloumi cheese OLYMPUS, sliced
· 200g small tomatoes
· 1 lettuce, coarsely chopped
· 1 small red onion, thinly sliced
· 1 green pepper
· 1 red pepper
· 2 tbsp red wine vinegar
· 1 tbsp fresh lemon juice (from 1 lemon)
· ½ tbsp salt
· 3 tablespoons olive oil
1. Whisk vinegar, lemon juice, salt in a large bowl. Whisk in 2 tablespoons oil.
2. Cut haloumi in half lengthwise.
3. Heat frying pan over medium heat and lightly coat with 1 tsp olive oil add cheese in a single layer and cook, flipping once, until browned, about 30 seconds per side.
4. Add the thinly sliced onion, the two peppers the dressing and toss to combine. Divide among plates and top with cheese!
