Ingredients
1 big Dakos (barley rusk)
- 2 ripe red tomatoes
- 1/2 of a red onion (chopped)
- 50g feta cheese
- 2 olives sliced or full
- 2-3 tbsp. extra virgin olive oil
- 1/2 tbsp. dried oregano
- 1 tbsp vinegar
- salt
Preparation
1. Dip the barley rusk for just one second in a bowl of water and then place the moistened rusk on a plate.
2. Grind the 1 tomato and chop the other one into small cubes separately. Add a pinch of salt and the vinegar and mix them.
3. Pour over the grated tomatoes with all its juices, so that the rusk soaks really well. Garnish with the chopped tomatoes.
4. Add the chopped onion.
5. Crumble the feta cheese on top and garnish with the sliced olives.
6. Drizzle with extra virgin olive oil and add the dried oregano on top.
