10 shrimps No1, raw and peeled
4 tbsp olive oil
1 onion finely chopped
1 clove garlic, chopped
1/4 fl. Ouzo
300 g red ripe tomatoes chopped or grated
150 g of feta cheese
2 tbsp parsley, chopped
1 tsp sugar
Salt - Pepper
1. Pre-heat the oven to 220 °C (430 °F).
2. Sprinkle the prawns with salt and pepper.
3. Heat the olive oil in a deep pan over medium heat.
4. Add the chopped onions and sautee until translucent, stirring occasionally.
5. Add garlic and cook for just a few minutes more.
6. Douse with ouzo.
7. Add the prawns and cook until the prawns begin to turn pink and firm up, about 5 minutes. Then lift out the prawns with a slotted spoon.
8. Add the tomatoes and cook for about 2-3 minutes until the mixture is a little thicker. Add a pinch of sugar and season with salt and pepper.
9. Spread the sauce evenly over the prawns in a baking dish and crumble the feta cheese over it.
10. Bake in the oven until the cheese melts (5-8 min). Sprinkle with parsley and serve.
