Ingredients

  • 2 slices sourdough bread
  • 200g Olympus halloumi
  • A handful of arugula
  • 1–2 tbsp honey
  • 1–2 tbsp olive oil (for the halloumi)
  • Juice of ½ lemon
  • Chili flakes (to taste)
  • Pomegranate seeds (for topping)
  • A little butter (for frying the bread)

Preparation

  • Mix olive oil, honey, lemon juice & chili flakes, then coat sliced Olympus halloumi in it and pan-fry until golden and caramelized.
  • Fry your bread in a little butter until it’s beautifully crisp and golden.
  • Pile fresh arugula onto the toast, add the warm Olympus halloumi, and finish with juicy pomegranate seeds.
    (Optional but highly recommended: extra drizzle of honey + pinch of chili flakes on top)
