Ingredients

4 Brioche bread buns

1 slice Halloumi original OLYMPUS 225gr

2 roasted bell peppers, orange and red, sliced

Arugula

Mayonnaise

Olive oil

Salt, pepper

Preparation

1. Preheat grill pan over medium-to-medium high heat for at least 5-10 minutes.
2. Slice the bell peppers, remove the stems and seeds and pat them until dry. Place in the grill pan with a little bit of olive oil. Roast until the peppers are ready for at least 20 minutes on both sides.
3. Slice the halloumi original Olympus in thin slices and grill it in the pan until lightly browned on each side in medium-high heat for a few minutes.
4. Place the sliced sides of the brioche bread buns on the grill pan until they are toasted.
5. Assemble the sandwich: Spread mayonnaise as preferred on the bottom slice of each brioche bread bun. Top each sandwich with three slices of peppers and one slice of grilled halloumi and arugula. Salt and pepper as preferred. Form the sandwiched with the remaining slices of the brioche bread.
