Spaghetti with salad cheese and asparagus

Ingredients

250 grams of spaghetti
200 grams of wild asparagus
150 grams of crumbled Οlympus salad cheese
4 tablespoons of olive oil
zest of one lemon
salt
freshly ground pepper
water from the boiled spaghetti

Preparation

Wash and clean the asparagus, throw the tails and keep the top of them. Cut them into desired pieces.

In a pot of lightly salted water, boil the pasta as the package says. About 3 minutes before they are ready, put the asparagus in the boiling pot.

If you don't feel safe with this process and think you will overcook them or leave them raw because the cooking time of the pasta will not match that of the asparagus, then you can boil the asparagus in a small separate pot.
Drain the pasta with the asparagus and keep a cup of the boiling water. Heat the olive oil in a large pan and add the salad cheese. Add also some of the pasta water (about ¼ cup), freshly ground pepper and the lemon zest. Stir to make a mixture and when this happens, throw in the pasta with the asparagus and mix.

Serve the food immediately and enjoy!
