250g pizza dough
300g OLYMPUS Salad Cheese
1 small eggplant chopped
1 red bell pepper chopped
1/2 red onion chopped
1 small zucchini
1/2 cup cherry tomatoes, halved
1/2 teaspoon oregano
1/4 teaspoon salt
2/3 cup pizza sauce
Salt & pepper
1. Pre-heat oven to 200 degrees.
2. Toss the vegetables with two tablespoons of olive oil, garlic powder, onion powder, oregano, salt, and crushed red pepper.
3. Roast the vegetables for 15 minutes, stirring once halfway through baking.
4. Drizzle the remaining olive oil onto a second baking sheet and then stretch the dough across the baking sheet.
5. If it springs back, let it rest for a few minutes, then continue to stretch it.
6. Bake the dough for 10 minutes until thek. edges begin to brown.
7.Remove the crust from the oven and top with pizza sauce, OLYMPUS salad cheese, and roasted vegetables.
8. Continue to bake the pizza for 10-15 minutes or until the edges are brown and the cheese is melted.
